(Makes one serving or 1 bread)
1/4 cup Teff flour
2 pinches salt
1 heaped tsp baking powder
Sprinkle of spirulina powder (optional)
1.5 tablespoons water
2 tbsp coconut oil or olive oil
1 egg (or one flax egg)
If using flax egg mix this first: 1 tbsp ground flax mixed with 3 tbsp water-let sit
Mix all dry ingredients-set aside
Mix oil and water together mixing in flax egg or regular egg last
Combine all ingredients - batter should be wet and sticky
Grease a cast iron pan with olive, coconut oil or butter and bring to medium heat
Pour batter into a hot pan and spread around with a spatula. When the first side is crispy flip and cook for another minute or so. The dough should be firm and easy to flip.
Cut into slices and top with eggs, fruit, nut butter, or topping of choice!
