Spirulina Muffins


*Gluten + Dairy + Egg Free


  • 1 cup brown or white rice flour

  • 1/2 cup teff flour

  • 1/2 cup cassava flour

  • 1 tbsp baking powder

  • 1/2 tsp sea salt

  • 1 tbsp Spirulina powder

  • 1tsp grated lemon zest (optional)

  • 1 cup grated zucchini

  • 1/2  cup grated organic apple (optional)

  • 1/4 cup good olive oil

  • 1 tbsp ground flax soaked in 2 1/4 cup filtered water



Preheat oven to 400

Mix ground flax with water and let sit. Combine all dry ingredients. Mix the oil in with the flax and water mixture and combine with dry ingredients. Fold in grated zucchini and optional apple. The batter should be thick and very green. Line muffin tin with muffin liners and fill with batter almost to the top. 


Bake at 400 degrees for about 30 mins or until a toothpick comes out clean.
